Stock or Bone Broth
Homemade meat stocks like chicken or beef broth are highly nutritious, supplying many valuable minerals like calcium, magnesium and potassium. They are also good for all sorts of intestinal disorders, and even modern research has confirmed what your grandmother already knew: chicken stock helps prevent & alleviate infectious diseases. Stock also adds wonderful, rich flavor to many dishes, sauces and soups. Homemade meat stocks are infinitely more nutritious than store-bought varieties, without the refined salt, preservatives and MSG!
Chicken Broth
- 1 whole chicken or 4 lbs chicken necks or backs, preferable pastured organic chicken from the farm – you can also just use the bones from a chicken you roasted, but the whole chicken gives more flavor, and you can use the meat afterwards in enchiladas or other recipes calling for shredded chicken
- 1 or 2 onions, quartered
- 1 or 2 carrots, well-scrubbed and cut in chunks
- 2 celery stalks
- 4 garlic cloves
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon Premier Pink sea salt or other unrefined sea salt
- Water – enough to cover the chicken completely
Put the chicken in the pot with the water, and bring to a simmer. Skin any impurities that rise to the surface. Once no more impurities rise up, add the other ingredients, and simmer on low heat for 12 – 24 hours. The longer you simmer, the more the minerals will leach out of the bones into the broth.
Fast & Easy Thai Curry
- 1 can Organic Thai Kitchen Coconut Milk (or other brand without preservatives), and
- 1 cup chicken broth (see above recipe)
- 1 tsp Thai Kitchen Red or Green Curry Paste
- 1 Tbsp Fish Sauce
- 1 garlic, minced
- 1 tsp. fresh ginger, minced
- favorite pastured meat & organic vegetables
Heat all ingredients on medium heat, stirring to mix the curry sauce. Saute the vegetables and the meat just long enough to cook through, and add to the sauce. Serve over brown rice. Serves 6.
