What Brand of VCO Do You Recommend for My Diet?

There are several good brands of virgin organic coconut oil that do meet the above requirements, including being only minimally refined.  A couple we like are the Nourishing Planet and Premier brands.  The Nourishing Planet brand is made from coconuts from a remote island in Fiji – available online at www.ecoviva.com and at fine health food stores nationwide.   Economical in the 1 gallon size.

That said, if you hate the taste of coconut oil, or cannot afford to take the recommended doses of the virgin, look for a high-quality brand of refined coconut oil that is made from fresh coconuts and only deodorized, not treated with chemical solvents.  Even this type of oil has been consumed for many years in the tropics, and has high amounts of lauric acid, (although usually not as high as the virgin) which will rev up your metabolism.  Look in your local health food stores as well as online, but make sure to ask if any chemicals are added or if it is hydrogenated – you want to stay away from that. 

What About Extra-Virgin or Raw Coconut Oil, is That Better for My Diet?

Not necessarily – there is no official distinction between virgin and extra virgin coconut oil, like there is with olive oil.  Virgin coconut oil, even if is called “raw”, does not contain enzymes that cannot be heated – if it did, it would not keep well on the shelf for 2 – 3 years. 

Does Cooking With Coconut Oil Cause the Harmful Trans-Fatty Acids?

No – coconut oil, like other saturated fats, is a very stable oil even at higher temperatures.  However, as with any oil or fat, you never want to heat it up to the smoking point.  Just make sure you don’t buy a hydrogenated or partially hydrogenated coconut oil – that will have trans-fatty acids in it to begin with.
